Swaps and Additions
We like to use a lot of oil when we make our potatoes because we like them crispy and brown. Adjust the oil to your liking. This is all personal preference, and it may take some adjusting. We also like the bacon grease, but you can leave it out. Not a fan of onions? Leave them out. Now… you can also add in green pepper, smoked sausage, ham, hamburger, and top with cheese. This is a great base recipe.

Handy Tip:
If you want to speed up the frying process, you can always slice your potatoes, boil them until tender and then add them to a skillet and fry them. It will save you some time. You can also boil some potatoes, keep them in the fridge and just fry a few each morning for breakfast if you don’t want to make a big amount at a time.

Southern Fried Potatoes
These Southern Fried Potatoes are cooked in a skillet until tender with delicious crispy edges. An easy, old-fashioned side dish everyone loves.
Prep Time 10 minutes
Cook Time 45 minutes
Total Time 55 minutes
Course Side Dish
Cuisine American
- 10 medium potatoes peeled, washed and sliced.
- 3/4 to 1 cup oil I use Canola
- 1 medium onion peeled and chopped
- 1 1/2 teaspoons minced garlic
- salt and pepper
- 2 to 3 tablespoons bacon grease optional
Have your grease and oil hot.
Add potatoes, onion, garlic, pepper.
Fry uncovered for about 45 minutes turning down stove after potatoes have browned and cooking until done.
Remove from stove, add salt.
