Ingredient Notes

- Eggs: Use large eggs and whisk until pale yellow and fluffy so the bites cook evenly and have a lighter texture.
- Heavy Whipping Cream: Adds richness and helps keep the egg bites tender and fluffy instead of rubbery. You can also substitute with half-and-half.
- Cheddar Cheese: Sharp cheddar adds a rich, savory flavor with a creamy texture. Monterey Jack, Swiss, pepper jack, or mozzarella can also be used for a different twist.
- Cooked Bacon: Use crisp, cooked bacon for a smoky, savory flavor. Replace with ham, cooked sausage, or turkey bacon.
Variations
- Veggie Egg Bites: Add cooked spinach, mushrooms, peppers, or broccoli. Cook and squeeze out extra moisture first.
- Ham and Swiss: Swap the bacon and cheddar cheese for diced ham and Swiss cheese.
- Spicy Cheddar: Swap the cheddar cheese for pepper jack, add a pinch of chili flakes, or stir finely diced jalapeños into the egg mixture for some extra spice.
- Higher Protein: Add ¼ to ½ cup of blended cottage cheese into the egg mixture. Be careful not to overfill the moulds.
How to Make Air Fryer Egg Bites

- Add bacon, cheese, and green onions to the mould.

2. Prepare the egg mixture (full recipe below) and pour over top.

3. Air fry, stirring partway through cooking. Let the egg bites rest before serving.
- For Fluffy Texture: Whisk the eggs well until no streaks of white or yolk remain.
- Pre-Cook Mix-Ins: Raw vegetables can release moisture as they heat up, which can make the egg bites watery and loose. Always cook and drain them first for the best texture.
- Do Not Overfill the Moulds: Leave a little space at the top since the eggs will puff up as they cook.
- Stir Halfway Through: Give the egg bites a gentle stir after 7 to 8 minutes of cooking. This helps to lift and distribute the bacon and cheese evenly through the egg bites.
- Don’t Overcook: Pull them from the air fryer as soon as the centers are set. They will continue to cook as they rest.

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
- ▢ 7 eggs
- ▢ 1 tablespoon heavy whipping cream
- ▢ 1 tablespoon milk
- ▢ ¼ cup shredded cheddar cheese
- ▢ 4 slices bacon cooked and crumbled
- ▢ 2 green onions sliced
- ▢ ¼ teaspoon dry mustard powder
- ▢ salt and pepper to taste
Preheat air fryer to 340°F.
Whisk eggs, cream, milk, mustard powder, salt & pepper in a medium bowl until fluffy and pale yellow in color.
Divide bacon, cheese and green onions over the cups of the molds (or small bowls).
Place in the air fryer basket and pour egg mixture overtop.
Cook in the air fryer for 11 to 13 minutes, stirring after 7 to 8 minutes. Cook just until eggs are set (they will continue cooking a little bit once removed). Rest 5 minutes before serving.
Air Fryers can vary. Based on your appliance and the size of the mold you use, the eggs may need a little bit more or less time. Cook just until they are set.
- Whisk the eggs until they’re a fluffy pale yellow. You should see no bits of white or yolk.
- Don’t add too many mix-ins or the egg bites won’t hold together.
- If adding veggies, precook them and squeeze out any moisture before adding.
- Stir the eggs after 7 or 8 minutes. This helps distribute the add ins (or they will sink or float depending on what you’ve added).
- Eggs will continue to cook after they’ve been removed from the air fryer so do not overcook.
- Keep leftovers in an airtight container in the refrigerator for up to 4 days and in the freezer for up to 2 months.
